- 250 g all-purpose flour

- 3 ripe bananas, mashed

- 120 ml Quebec maple syrup
- 75 g melted butter
- 120 ml milk
- 1 tsp vanilla
Method
- Heat the oven to 175 °C and line a 12-cup muffin tin.
- Whisk flour, baking powder, baking soda, and salt.
- Mix bananas, eggs, maple syrup, butter, milk, and vanilla; fold into the dry ingredients.
- Divide among cups and bake for 18–20 minutes, until a skewer comes out clean.
Conversion and rationale
Original sweetener (classic version): 150 g granulated sugar
Conversion used: Replace 150 g sugar with 120 ml maple syrup; reduce milk by 60 ml and lower the oven by 15 °C.
Why Quebec maple syrup: Maple deepens the banana flavor with light caramel notes while using a local Quebec sweetener and less refined sugar.
