Substitution rules

  1. Basic equivalence: replace 1 cup (250 ml) white sugar with about 3/4 cup (180 ml) maple syrup.
  2. Reduce other liquids in the recipe by about 3 to 4 tbsp (45–60 ml) per cup of syrup added.
  3. Lower oven temperature by about 15 °C (25 °F): syrup caramelises faster.
  4. For leavened doughs, add a pinch of baking soda per cup of syrup to neutralise acidity.
  5. Favour Quebec maple syrup for its flavours (umami, woody notes) that enhance sauces, glazes and marinades.
