  1. Simmer the pomegranate juice and maple syrup for 3 minutes, then cool completely.
  2. Stir in the lime juice.
  3. Fill four glasses with ice and divide the pomegranate-maple syrup among them.
  4. Top with soda, stir gently, and garnish with cherries.

Conversion and rationale

Original sweetener (classic version): 120 ml commercial grenadine, approximately 100 g sugar

Conversion used: Replace the sweetened grenadine with 60 ml maple syrup plus 120 ml pomegranate juice; reduce the soda by about 60 ml if a less sweet drink is preferred.

Why Quebec maple syrup: Maple gives the pomegranate base a deeper, less one-dimensional sweetness. The homemade syrup keeps the familiar red, sparkling mocktail while using a local sweetener.
