Conversion and rationale
Original sweetener (classic version): 200 g white sugar
Conversion used: Use 180 ml maple syrup for 200 g sugar and reduce the water by about 120 ml to account for the syrup's liquid.
Why Quebec maple syrup: Maple adds gentle caramel notes that round the lemon's acidity. It also replaces refined sugar with a local Québec ingredient and contributes trace minerals.
General rule: 1 cup (250 ml) sugar ≈ 3/4 cup (180 ml) maple syrup; reduce liquids by 45–60 ml per cup of syrup and lower oven by 15 °C. Substitution calculator →
