Ingredients
- 1 pie shell
- 2 cups mashed sweet potato
- 2/3 cup maple syrup
- 2 eggs
- 3/4 cup evaporated milk
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/4 tsp salt
Method
- Blend sweet potato, maple syrup, eggs, milk, spices and salt smooth.
- Pour into pie shell.
- Bake at 190°C 15 min, reduce to 160°C and bake 40–45 min until set.
- Cool before serving.
Conversion and rationale
Original sweetener (classic version): 3/4 cup brown sugar
Conversion used: Brown sugar → 2/3 cup maple syrup; reduce evaporated milk by 2 tbsp to balance liquid; oven −15°C after initial set.
