  1. Mix ground almonds, flour, salt.
  2. Whisk in egg whites and maple syrup until smooth.
  3. Stir in beurre noisette.
  4. Rest batter 30 min.
  5. Fill buttered molds 3/4 full, bake at 195°C for 13–15 min until golden-edged.
  6. Cool briefly, unmould.
